Yes, my friends, you know what time it is … it’s Secret Recipe Club time!
Faithful readers of Rhubarb and Honey know that I’ve been participating in The Secret Recipe Club for awhile now. The idea of The Secret Recipe Club is similar to other blog exchanges in that each participating blogger is assigned another participating blog to make a recipe from, but the twist with The Secret Recipe Club is that you can’t tell anyone whose blog you have — shhhh, it’s a secret! — until you finally post about the blog you were assigned and the recipe you chose.
This month, my assigned blog was Art From My Table, written by the lovely Chellie from West Michigan. Chellie’s blog focuses on the “culinary arts, featuring savory foods, delectable desserts, home cooked meals, and celebrating my passion for creating and eating real food.” I am a huge proponent of “real food” to so I’m thrilled I got Chellie’s blog this month!
And yes, her blog is indeed filled with lots of savory and delectable recipes, such as BBQ chicken quinoa salad, chicken pot pie casserole with sweet potato and apple, pumpkin oatmeal cups, and even simple fruit leather.
So, what savory and delectable recipe did I choose? No bake energy bites! Chellie found this recipe over at Smashed Peas and Carrots, another adorable blog that I am happy to have stumbled on, and I’m so glad she did … I love this recipe!
Filled with wholesome ingredients, these no bake energy bites are a fabulous way to kick off your day … and they make a perfect afternoon snack as well! I don’t know about you, but when 3:00 pm hits, I’m usually in need of something to get me through the rest of the day. Well, these babies are just the ticket! They’re also incredibly simple to make so there’s no excuse not to have some on hand at all times.
But … how do they taste, you ask? Delicious! The peanut butter provides the majority of the flavor, but the hint of chocolate from the cocoa powder is definitely there … and the subtle sweetness from the honey and dried cranberries is perfect. It was all I could do not to eat them all this morning!
And the truly great thing about this recipe below? You can make all the substitutions you want. Don’t like peanut butter? Feel free to substitute any other nut butter instead. No wheat bran? Add in a little wheat germ or ground flax seed instead. Not a chocolate fan? Leave out the cocoa powder! Not a fan of dried cranberries either? Add in some raisins, chopped dates — or any other dried fruit — instead. Really … the possibilities are endless! Enjoy!
No Bake Energy Bites
- 1 cup oatmeal
- 1/2 cup peanut butter
- 1/3 cup honey
- 3/4 cup ground graham cracker crumbs
- 1/2 cup wheat bran
- 1 tablespoon cocoa powder
- 1/2 cup dried cranberries
- 1 teaspoon vanilla
1. Combine all ingredients in a medium-sized bowl, and stir together until thoroughly incorporated (everything should stick together well
2. Let mixture chill in the refrigerator for at least one hour or evenovernight.
3. Once chilled, roll into bite-sized balls. Store in an airtight container in the refrigerator.
Notes: I let my mixture chill in the fridge for an hour, but it was still a bit soft to roll into balls so I left it in overnight. The next morning, it was perfect. The balls will keep for up to 1 week in the fridge as well.
Oh, one more thing … sadly, this will be my last Secret Recipe Club post. The Chef and I closed on our new house last week (finished pics coming soon!), and needless to say, I’m going to be a bit busy. Since I won’t be able to give my fellow SRC’ers the full attention they deserve, I’m going to bow out for awhile … but you never know … they may see me again in the future!
